Mom Baird's Stuffing
Ingredients:
4 Cups Celery 2 Cups Boiling Water
1 Teaspoon Pepper ½ to ¾ Cup Butter
½ Cup Onion 1 Tablespoon Salt
5 Teaspoons Poultry Seasoning
1 ½ Quarts of Lightly Packed Bread Crumbs (1 ½ Loafs)
(Substitute Italian seasoning for the poultry seasoning if desired)
Bring water to a boil and add celery, simmer for 15 to 20 minutes (until tender).
Drain water keeping 1 cup.
Cook onion in butter over low heat (about 15 minutes), do not brown.
Mix bread and seasonings, add celery plus the 1 cup of saved water.
Add butter & onions mixing with a fork or hands.
Makes enough to fill a 10lb turkey, do not stuff turkey until ready to cook
